If you haven't heard of Wilderness Trail yet, allow us to have the pleasure of introducing you! This is - for sure - going to be one of the next big things in bourbon. And of course your faithful beast masters are all over it.

First the basics. Founded in 2006 in Danville, KY, Wilderness Trail was created by two guys, Shane and Pat, who had been providing quality assurance to the bourbon industry for years. They had the science down, including a library of yeast strains and data on all the best grains in the country, before they ever distilled their first drop. You hear a lot of "science talk" in the industry, it doesn't always equate to taste, but in this case - WOW!

The nose has a hefty dose of peanuts, followed by butter-topped baked bread. It's soft, round, and creamy yet very rich and nutty. Really awesome nose that combines sweets, smoothness, and a lot of good baking spices and nuts. The palate is wickedly smooth, bringing in some pops of wood, Payday bars, salty caramel, more peanuts. The nose keeps opening up in the glass without water. It's even richer and develops some tart cherries, saddle leather, and char notes. The finish is very pleasant, absolutely no alcohol burn, with the different elements coming together into what we love about wheated bourbon - soft yet rich buttery bread with wood, sweets, and deep flavors slowly disappearing on your tongue. Lovely!
