We’ve been quietly admiring the work of Proof & Wood from afar. These are the fellas that make all those lovely ryes like The Senator and The Representative, what with their classy white labels and waxed tops. They seem to pick gems of MGP barrels and serve them up just how we like them - cask strength non-chill-filtered, at high proof. When we got the chance to have our very own barrel, we jumped on it with all four paws and a tail!

We tasted through a number of their barrels and this bourbon from their Tumblin’ Dice release just blew our minds. It’s like the all-time everyday drinking winner, a cask strength single barrel bourbon at 117 proof, coming in under $60??!? Seriously try and find that anywhere. Not to mention it’s gorgeous with perfect wax, and it’s fucking delicious.

The “heavy rye” bourbon recipe (60% corn, 36% rye) is one of our all-time favorite recipes. This barrel has awesome sweets up front - leading with dark chocolate on the nose, Hershey’s with Almonds, and then blossoming on the palate with rich bbq spice, and a perfect balance of charred oak and dark cherries.

Be careful of that finish. This drinks waaaay smoother than 117 proof and it’ll go down quick!
